Gino D'Acampo's journey concludes in Bologna, known as the culinary heart of Italy. At a local trattoria, he encounters a chef who has perfected her bolognese sauce over nearly three decades. Inspired, Gino cooks his grandfather's version of tagliatelle alla bolognese and delves into the area's famous mortadella. To wrap up his adventure, he searches for the region's iconic pasta, tortellini, and invents his own variation using ricotta, hazelnuts, orange zest, and chocolate chips.
