Rick loves a good cooking challenge. After an adventurous day of boating and kayaking with a local ecotourism group in the Sea of Cortez, he fires up the grill for dinner on the beach at Espiritu Santo Island, renowned for its rich marine biodiversity. The waters here are home to vibrant coral reefs, sea lion colonies, and over 500 fish species. To gather ingredients, Rick visits the La Paz market for local cheese, fresh produce, and chiles, and buys seafood from a fisherman on the island. During the trip, he learns about flying manta rays, dolphins, and the unique local vegetation before preparing fish and a delicious papaya salsa on the beach.
