Always eager to deepen his culinary knowledge, Rick embarks on a purposeful vacation this time to the mountains of Finca Las Nieves, renowned for its artisanal coffee and organic gardens. Together, we delve into sustainable gardening techniques and learn to make delicious vegetarian tamales and sopa de chepil in the Finca's kitchens. Afterward, we set off on a hike to discover stunning orchids and bromeliads, followed by a trout lunch at a local trout farm. Back home, Rick prepares his take on trout with chorizo. At Rancho Pitaya, Rick enjoys horseback riding to a cactus grove with breathtaking views of the Oaxaca valley, culminating in a picnic featuring grilled tasajo beef, fresh cactus salad, and red chile potatoes.
