Andrew's cherished game bird, Goose, gets a double treatment tonight. First, the breast is seared and piled onto a grilled sandwich with deeply caramelized onions and gooey melted cheese, echoing a French onion soup. Then, the rest of the bird is cured, roasted upright on a beer can for extra moisture, and plated with a crisp, refreshing apple-fennel salad.
